Lemon Blossom Pie













     Lemon Blossom Pie
3 Egg yolks   ( keep the whites separate)
2  t   lemon rind
1/3 C lemon juice
4 T   cornstarch
1/4 t salt
11/2 C boiling water
2 T butter
1 8 in Baked Pie Shell

In a bowl mix-  Mix egg yolks,lemon juice & rind : Set aside. On the stove Mix Sugar,cornstarch ,salt   together add boiling water and Stir until thicken, Slowly stir in Egg mixture and cook 2 minutes more, Take off stove and add butter -Let Cool before poring into baked Pie Shell.

Meringue :
 Mix together Egg whites and salt . Beat until foamy add 6 T sugar and Beat until it hold a stiff peak. Spread over Pie and Bake at 400 until golden brown.
