Gluten Free Blueberry Muffins



Inspired by today's book : Midnight Snacks and Murder : 













  • 2 to 3 very ripe bananas / mashed
  • 1/3 cup melted butter ( you can use coconut oil)
  • 1 teaspoon baking soda
  • 1 1/2 cups gluten-free flour 
  • 1/4 teaspoon xanthan gum ( leave out if included in flour) 
  • Pinch salt
  • 1/2 cup sugar (1/2 C maple syrup) 
  • 1/2 teaspoon cinnamon
  • 2 large eggs , beaten
  • 1 teaspoon pure vanilla extract
  • 1/2-1 cup fresh or frozen blueberries ,


Directions 

 In a bowl mash the bananas and add baking soda. Stir in the rest of ingredients with Blueberries last. You will need to gently fold those in. Scoop Mix into muffin cups and Bake at 350 for about 20 minutes.
