We are Celebrating Avocado Day * Avocado Bread













      Avocado Bread

3 C flour
2 C sugar
1 t baking soda
1 t baking powder
1 t  salt
1/4 t cinnamon
3 Eggs
1 C mashed Avocado
1 C oil
3 t vanilla
11/2 C chopped Pecans

In a bowl mix sugar,eggs,vanilla -beat well. Add avocado,oil and dry mixture. This batter will be very thick ( you may need to add a little water to thin). Pour into 2 greased loaf pans. Bake at 350 for an hour.

Gluten Free Blueberry Muffins



Inspired by today's book : Midnight Snacks and Murder : 













  • 2 to 3 very ripe bananas / mashed
  • 1/3 cup melted butter ( you can use coconut oil)
  • 1 teaspoon baking soda
  • 1 1/2 cups gluten-free flour 
  • 1/4 teaspoon xanthan gum ( leave out if included in flour) 
  • Pinch salt
  • 1/2 cup sugar (1/2 C maple syrup) 
  • 1/2 teaspoon cinnamon
  • 2 large eggs , beaten
  • 1 teaspoon pure vanilla extract
  • 1/2-1 cup fresh or frozen blueberries ,


Directions 

 In a bowl mash the bananas and add baking soda. Stir in the rest of ingredients with Blueberries last. You will need to gently fold those in. Scoop Mix into muffin cups and Bake at 350 for about 20 minutes.

Lemon Chiffon Cheesecake








Chiffon Cheesecake
1  3oz pkg lemon Jello
1 C sugar
1 8oz Cool Whip
6 T sugar
1/4 C  margarine
1 C boiling water
1 8 oz cream cheese
1 1/2 c graham cracker crums


Make crust : cracker crumb,sugar and melted margarine. Press into pie pan and set aside.

In a small bowl dissolve Jello in Boiling water . Set aside. Mix  Cream cheese and sugar together and add jello mixture in. Mix well -and stir in Cool Whip in until smooth. Pour into pie pan and Chill .
You can top with any type of fruit.


Cheese Cake Pie










Cheesecake Pie

1 bought graham cracker pie shell

11 oz cream cheese / soften
2 eggs
1/2 C sugar
1 t vanilla

1 1/2 C sour cream
1/3 c sugar
Berries for toppins


Mix together Cream  cheese,and eggs.Add 1/2 c sugar and vanilla. Pour into crust and bake at 375 for 20 minutes. Leave   on but take out pie.

In a bowl mix Sour cream and 1/3 c sugar and pour over pie. Turn oven off and leave pie in for 4 minutes. Top with fruit.

Preacher's Upside Down Cake














 Baptist Preacher's Upside Down Cake

1/4 C Butter
1 Can pineapple slices ( drained & cut in half)
1/2 C Brown sugar (packed)
1 pkg yellow cake mix
maraschino cherries / pecan halves

In a 12 in skillet melt butter. Sprinkle brown sugar and lay pineapples down. Pecans and cherries arranged over pineapple slices. Prepare cake mix as directed and pour over fruit. Bake at 350 for 35 minutes.    Lisa 

*A tender moist cake traditional made in the South when the minister came by to visit.  Even if not Baptist.

Barbra Bush Chocolate Cowboy Cookies

  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1 ½ cups (3 sticks) butter, at room temperature
  • 1 ½ cups granulated sugar
  • 1 ½ cups packed light-brown sugar
  • 3 eggs
  • 1 tablespoon vanilla
  • 3 cups semisweet chocolate chips
  • 3 cups old-fashioned rolled oats
  • 2 cups unsweetened flake coconut
  • 2 cups chopped pecans (8 ounces)
  • PREPARATION

    1. Heat oven to 350 degrees.
    2. Mix flour, baking powder, baking soda, cinnamon and salt in bowl.
    3. In a very large bowl, beat butter with an electric mixer at medium speed until smooth and creamy. Gradually beat in sugars, and combine thoroughly.
    4. Add eggs one at a time, beating after each. Beat in vanilla.
    5. Stir in flour mixture until just combined. Stir in chocolate chips, oats, coconut and pecans.
    6. For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
    7. Bake for 15 to 17 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies from rack to cool.

2. Metal Cookie Cutters : 








3.  Place cookie cutters on a parchment lined baking sheets. Fill the cookie cutters with assortment of beads leaving a place for a hanger. Bake at 375 until melted. Let Cool and pop out of Cookie cutter. And place thread and loop for hanger. Lisa

1 Pkg Milk chocolate bits
1 pkg colored miniature marshmallows 
1 C chopped pecans 
1 stick of butter

Melt chocolate and butter. Cool and Stir in nuts and marshmallows. Roll into log in aluminum foil and Chill until harden , Slice when child. 

Christmas Date Loaf













Christmas Date Loaf

11/2 C Sugar
1/2 C  Water
2 C Pecans / chopped
1 T light corn syrup
2/3 C evaporated milk
1 pkg chopped  dates
1 T butter
1 t  vanilla


Boil sugar,milk,water and corn syrup to soft boil stage. Add Dates -let cool. Add vanilla and butter. Stir in till Creamy and Add Pecans. Roll in powder sugar into a log shape. Wrap in damp cloth and refrigerate until it sets up.

Beef Hot Dog Chili Recipe












Basic Beef Chili  for Hot Dogs : 






  • 1lb ground beef 
  • 1 cup beef broth, divided
  • Chili spices - 1 T of Chili powder and then 1/4 t  garlic 7 onion powder and dry oregano 
  • 1 tablespoon brown sugar, pack
  • ½ cup ketchup
  • ¾ cup tomato sauce
  • Salt & pepper to taste 

  1. Add  beef to a pan, with a little oil and cook until almost done.Drain the grease. 
  2. Add in ⅓ cup of broth.
  3. Mix together the spices and sprinkle evenly over the meat . Mix well. 
  4. Mix in ketchup & tomato sauce
  5. Add in the rest of the broth . Bring to boil. 
  6. Reduce heat, cover and let chili simmer for about 15 minutes.
  7. Taste & season to your liking 

Home made Bagels












  • 2 cups whole wheat pastry flour
  • 4 tsp baking powder
  • 1 tsp sea salt
  • 2 cups plain greek yogurt
  • 1 egg, beaten

  1. In a large bowl combine whole wheat pastry flour, baking powder, sea salt, and plain greek yogurt. Combine using a large spoon or spatula until it starts to stick to itself in a large ball.
  2. Transfer the dough to a large, flat surface that has been lightly dusted with flour, and knead the dough about 15-20 times until it starts to stick to itself, not to your hands.
  3. Divide the dough into into 8 equal portions.
  4. Roll each portion out into a thick cylinder or rope and then join the ends to form your bagel. Brush with egg wash - great time to add topping if you would like . 
  5. Bake 375 on a baking sheet lined with parchment for 20 -25 minutes

Hot Fudge Pie









Today's celebrates the taste of Hot Fudge Sundae with Pie and Ice Cream . Enjoy 








 Hot Fudge Pie

1/2 C Butter
3 squares of unsweetened chocolate
1 1/4 C sugar
1/4 C flour
1/4 t vanilla
pinch of Salt
3 large Eggs
1/4 C chopped pecans

Melt Butter and chocolate  in microwave. Beat in Sugar. Fold in flour and salt. Add vanilla. Beat up Eggs and fold in then add pecans. Pour into a greased pie pan and Bake at 359 for 20 to 30 minutes

Center should still be most ,don't over cook. Serve Warm with ice cream.

Grilled Tequila Lime Shrimp






 My hubby loves to grill. And when its Shrimp season in Louisiana its time to fire up the grill for this recipe. Lisa




1 LB of large shrimp /cleaned

Marinade :


2 T lime Juice
2 T Tequila
1/4 C olive oil

Seasoning : Pinch of cumin, black pepper and garlic salt

6 skewers

Limes Wedges (garnish)



Place shrimp and marinade in a plastic bag . And Mix-place in refrigerate for 1-3 hours.
When ready to cook on grill - Drain and thread shrimp on skewers (5-6) . Let Cook on lightly greased grill for 5 to 6 minutes or until shrimp is cooked (turn pink)

 Take Off and serve with lime wedges


Wooden skewers  ( if using wooden ones on the grill they need to be soaked in water at least thirty minutes before grilling)




Tequila Sunrise Recipe













 Happy National Tequila Day !! 

Let's start off our morning with a cocktail : 







6 ounces of Orange Juice
11/4 ounces of tequila
1 t Simple syrup
1 t grenadine
slice lime

 Combine orange juice, simple syrup, and tequila. Pour 2/3 over ice in a glass. Mix grenadine with remaining mixture and slowly pour into glass. Garnish with a slice of lime.


Making Simple Syrup:
2 C water
2 C Sugar 

In a saucepan, boil sugar and water over medium-high heat until sugar has dissolved. Remove from heat and let cool completely before using.

My favorite Fudge











Today is National White Fudge Day ! And I am sharing my favorite fudge recipe. 






 My Favorite Fudge

2 C  Sugar
3 t Cocoa
1/8 t cream of tarter
1 small can Pet milk
1/2 stick oleo
1 t Vanilla
1 C chopped pecans


On medium Heat bring to Boil the first 4 ingredients. Until a soft boil stage on a candy thermometer.Take off of heat and add remaining ingredients. Let Cool and pour into Butter dish. After it firms -slice.

*No thermometer  ? Drop in cool water should form a ball.

Ice Cream Delight

Ice Cream Delight

1/2 gal vanilla ice cream  /soften
1 C shredded coconut
2/3 C brown sugar
2 C Rice Kris pies / crushed
1/2 C  Chopped  Nuts
1/3 C melted butter

Mix all ingredients except ice cream together. Put 2/3 of mixture in bottom of pan top with ice cream and layer the ice cream  with rest of mixture. Freeze and serve.

Sunshine Cobbler * Sunday's Dessert















    Sunshine Cobbler

1 large can sliced peaches
1 box lemon cake mix
1 stick margarine
1 C  chopped pecans


Empty can of peaches in a 9 x 13 baking dish. Sprinkle on cake mix and dot with pays of margarine. 
Sprinkle with pecans .  Bake at 350 for 45 minutes.

Piccadilly Cafeteria Strawberry Pie

 Piccadilly Strawberry Pie

2 pints fresh strawberries/ sliced
5 T cornstarch
11/2 C Sugar
21/2 C Water
1 small box strawberry Jello
1/8 t Salt

2 Cooked Pie Shells
Cool Whip Topping

Mix together cornstarch,sugar & water and cook on Low until clear. Add to sliced strawberries ,and fold in Jello and Salt- Mix. Pour into prepared pie shells . Chill until set. Garnish with whip topping. 

If you are from Louisiana you have probably eaten here : And this Pie is a favorite menu item for many  Lisa

Salt Dough Christmas Ornaments * Recipe


Salt Dough Christmas Ornaments : 
















1 cup salt
2 cups of flour
¾ cup of water





  1. In a large bowl mix salt and flour together.
  2. Gradually stir in water. Mix well until it forms a doughy consistency.
  3. Turn the dough onto the bench and knead with your hands until smooth and combined.
  4. Make your creations using the salt dough.
  5. Place the salt dough creations into the oven at 180C. The amount of time needed to bake depends on the size and thickness of the salt dough creations.

Paint with your favorite paints . And thread with ribbon for a tree ornament.

Holiday Simmering Potpourri


It's Smelling like Christmas ! 









Simmering  Homemade  Potpourri  : 





2 cinnamon sticks
1 T cloves
1 vanilla bean or extract
Oranges slices  (Dried)
Cranberries
Nutmeg ( Pumpkin Spice)

2 C Water


You can put this in a small saucepan and Simmer. But you will need to check it frequently & add water when needed.
Or you can use a small crockpot  (dip size) to keep this warm.



Lisa 's Tips 

You can change up ingredients as needed.  I buy spices at our local Oriental market -they have bulk at great prices. 

Need a hostess git ? Bundle up mix in a Bag & Give as a gift. 


Homemade Holiday Lollipop



















  • 2 cups sugar
  • 2/3 cup light corn syrup
  • 2 teaspoons flavored extract, ( match your holiday) 
  • Assorted sprinkles or candy ( Holiday ) 
  • Lollipop sticks

* You will need a candy thermometer.  You can also use a lollipop mold to make these. Spray before pouring sugar in mold covering the stick. Let harden completely  before un  molding and wrapping. 


 

INSTRUCTIONS

Line two large cookie sheets with parchment paper or Silpat baking mats. Fill a large bowl with ice and water. Set aside.
Combine the sugar, corn syrup and 1/4 cup water in a small saucepan set over medium heat. Attach the candy thermometer to the interior of the saucepan.
Increase the heat to medium-high to bring the mix to a boil, stirring until the sugar has disolved. Using a small pastry brush dipped in water, wash down the sides of the saucepan to prevent crystals from forming.
Boil the mixture for 5 to 7 minutes until it reaches 310ºF (hard-crack stage) on the candy thermometer. Immediately transfer the saucepan to the bowl of ice water, carefully submerging the sides but ensuring no water seeps into it. Swirl the pan for 10 to 15 seconds to help the mixture cool then remove the saucepan from the bowl of ice water. If you're using an extract, carefully swirl it into the mixture immediately after you remove the saucepan from the ice bath.
Working quickly, pour the syrup onto the baking sheets to form circles that are 2 to 3 inches in diameter. (Space the lollipops 3 to 4 inches apart to guarantee they don't run into each other.) Immediately press in the lollipop sticks and sprinkle the lollipops with your sprinkles or candy, lightly pressing the garnishes into the syrup. Let cool completely until fully hardened then carefully peel the lollipops off the baking sheet.

Hot Apple Cider Spice

Christmas in July  : Friday 












Hot Spice Apple Cider 

1 t all spice
16 whole cloves
2-3 cinnamon sticks


2 Quarts Apple cider
1/2 C firmly packed Brown Sugar
1 small can mandarin oranges
1 Tea bag 

Take your crockpot out. In a cheese cloth put the first 3 items. Simmer jntil ready. Will also make your house smell wonderful .

Strawberry Daiquiris Pie

1 refrigerated Pie Crust 
2 C strawberry Sorbet
2 container  Strawberry yogurt
1 Chopped Frozen strawberries
1/4 C Rum
1/4 C Sugar
1/2 C Fresh Strawberrys


  • 1
    Heat oven to 450°F. Place pie crust in ungreased 9-inch pie plate. Press crust firmly against side and bottom; flute. Bake 9 to 11 minutes or until light brown. Cool completely, about 1 hour.

    Mix sorbet, yogurt, chopped strawberries and rum until blended. Spoon into crust. Freeze uncovered until firm, about 3 hours.

    Let stand at room temperature 10 minutes before cutting. Roll moistend fresh strawberries in sugar; garnish each slice of pie with sugared strawberries.

    Fun and Easy Pigs in Blanket

     It's National Hot Dog Day !








    Pigs In Blanket : 








    8 hot dogs

    4 slices Cheese (each cut into 6 strips)

    1 can of Crescent dinner rolls 

    Heat oven to 375 degrees. Slit hotdogs and place 3 strips of cheese in slit.

    Wrap a triangle of the crescent rolls around the hotdog. And place on baking tray -cheese side up. 

    Bake 12-15 minutes or until done. 

    Sour Candy Day : Lemon Drops




     I love Lemon candy : Today in honor of Sour candy day we are making Lemon drops.
















    • 1 c. sugar
    • 1/4 c. corn syrup
    • 3-4 Tb water
    • 2 tsp citric acid
    • 2-3 drops all-natural yellow food coloring
    • Lemon juice
    1. Place parchment paper on small baking sheet .
    2. Place sugar, corn syrup, and water into a saucepan. Bring to soft boil, stirring constantly.
    3. Place candy thermometer into saucepan. Do not stir anymore at this point. Once it reaches 310 degrees, remove from heat.
    4. Allow the mix to sit for 30 seconds-1 minute. Place a couple of drops of coloring, flavoring, and citric acid and stir.
    5. Pour into parchment-lined pan. Let it cool briefly for 4 minutes (you want the candy harden a little but still soft so you can cut through it).
    6. Using kitchen scissors, cut into desired shapes. Dust with powdered or fine-textured sugar (this keeps from the candy from sticking together).
    7.  Kitchen Tip:
