Easy Egg Drop Soup











 And from my Hubby : Easy Egg Drop Soup 







  •        3 eggs lightly beaten
  • 3 1/2  C of good chicken stock 
  • 1 T cornstarch plus (1/2 C stock) 
  • 1/4 t minced ginger
  • 1 T soy sauce
  • 3 green onions / chopped
  • 3/4 C shiitake mushroom 
  • salt & pepper to taste 
 Place the chicken stock, ginger, soy sauce, green onions, mushrooms and  in a pot and bring to a boil. While waiting to boil make a slurry with ( corn starch /1/2 C stock). .Add to mixture when ready. Reduce Heat and let simmer for  a few minutes. When ready to Eat . 
 Slowly pour in the beaten eggs while stirring the soup. The egg will spread out into ribbons. Turn off the heat and garnish with a few more chopped green onions. Serve immediately.
