Bacon Cheese Omelet

   Happy   Egg  Day !!! 


    Thursday  Night Omelet

 6 strips bacon
1 small onion  / minced fine
1 small green pepper / minced fine
6 eggs      beaten
1/2 C American Cheese 
bacon drippings

 Fry bacon & drain -saving drippings , Saute onions & green peppers until soft. In  a bowl whisk -eggs until fluffy  add in salt and pepper to taste.Pour into a hot  skillet with 2 T bacon dripping -turn to Low - and as egg starts to cook add onion,peppers ,bacon and cheese. Fold in half & cook until cheese melted. Serve with Toast for a cook & easy meal . Lisa
