Easy Macaroon Recipe


 Smile & Make these Easy Macaroons 












      31/4 C shredded Coconut
      3/4 C    Condensed milk
      1/2 C  melted chocolate

 Set Oven at 350  and lined cookie sheet with parchment paper.  Mix  Coconut & condensed milk  together and drop by spoonful on cookie sheet. Bake for 15 to 20 minutes.Let Cool and dip in chocolate.

Baked Pears with Macaroons










     Macaroon -Almond Baked Pears

  1   29 oz can of pear halves drained
  1/4 C  orange liqueur
  1/3 C apricot presserves
  2   C     Crumbled Macaroons 
  2   C    Whipped Cream 
  1/4   sliced almonds 


 Using a 10x6x2  baking dish - lay pears cut side up. Combine liqueur & preserves together and pour over pears. Sprinkle almonds and macaroons on top. Bake at 350 for 20-25 minutes. Serve warm with wipped cream.

Mint Chicken Breast







                           Mint Chicken


 
 2 Chicken breast
 1 clove garlic
 1/2 C flour
1/2 c  margarine
 1/4 C lemon juice
1/2 C fresh chopped Mint


   Direction : 

  1. In a bowl , mix together the chicken pieces and garlic. Toss with the flour just to coat, and shake off excess.
  2. Heat the margarine in a large skillet over medium-high heat. Add the chicken pieces; cook and stir until browned. Add the mint leaves and lemon juice, cover and steam for about 5 minutes, just until the chicken is cooked through. Do not over cook the chicken or it will be tough.


Mint Julep Day : A Southern Classic

 Classic Southern  Mint  Julep 



     2 C sugar
     2 C water
      2 C  packed fresh mint leaves

In Each Glass :
     1/2 C Crushed Ice
     1 oz Bourbon 

For syrup, combine the sugar, water and chopped mint in a large saucepan. Bring to a boil over medium heat; cook until sugar is dissolved, stirring occasionally. Remove from the heat; cool to room temperature.
Line a mesh strainer with a double layer of cheesecloth or a coffee filter. Strain syrup; discard mint. Cover and refrigerate syrup for at least 2 hours or until chilled.
For each serving, place ice in a metal julep cup or rocks glass. Pour 1/4 cup mint syrup and bourbon into the glass; stir until mixture is well chilled. Garnish with mint sprig. Yield: 10 servings (2-1/2 cups syrup).

angel Bisuits Recipe













        Angel Biscuits

1 pkg yeast

2 T water( lukewarm)

5 C flour

1 t soda

3 T baking powder

4 T sugar

1 t salt

1 C shortening

2 C buttermilk


Dissolve yeast in water. Mix dry  ingredients & cut in shortening.  Add yeast & buttermilk -Knead & roll out. Cut biscuits and Bake at 400 for 12 to 20 minutes .

National Biscuit Day * Freezer Version











    It's National Biscuit Day !!


A True Southern tradition and my Grandmother was a master. But most time i cook either can or frozen biscuits from the bag. 

     Freezer Bisuits

 4 C flour

8 t baking powder

4 T sugar

1 t cream of tarter

1 t salt

1 1/3 C milk

1 C shortening

Mix dry ingredients -add 1 C shortening add 1 1/3 C milk to mixture. Pat or Roll out and cut out biscuits. Place on cookie sheet for 10 minutes . They can be frozen at that time. 

When ready to bake -thaw  and bake at 450 degrees for 10 minutes.   Lisa

Memorial Day Burgers





       Memorial Day  Burgers :















 Did you know that 85% of  America will be making Burgers today ! So if you are making Burgers instead of Brisket today -here's an easy recipe : 

                          80/20 ground beef

                          1T Worcester sauce 

                          1 T olive oil

                          Seasoning of your choice( I use a local spice mixture) but you can

                          garlic,onion & salt and pepper mixture. 


  Make your patties  . And then grill on high  about 5-6 minutes on each side. Let rest & Enjoy  with all the works.  Lisa

Memorial Day Page


  Hi Sunday Readers : 

  Today's project is made with the Project Life App which can be downloaded from the Play Store. In either  IPhone or Android version. 

 It's a quick and easy way to get pictures off your phone and onto a page. Which can be shared with social media or printed out for an album.




  It's Memorial Day weekend here - and my pictures are from our local Veterans Memorial. A brick path way surrounds the area with names of veterans past & present. And flags from the branches of  the military.  Today we remember the Ones that gave All . Lisa

Grade Popsicle Day * Healthy Recipes



   Happy National Grape Popsicle Day !


      This perfect Summer /hot weather treat is easy to make. You can use molds that you can buy about anywhere or small paper cups with sticks. 







         Want healthy ones : 
      
  •     3 C  fresh grapes
  •   2 tsp sugar 
  Processed in food processes  until smooth  . And place in molds and let freeze. 








Here a twist on that :
     
 4 C  white Grape juice
  3 C sliced strawberries
   1/2 C sliced white grapes
   1/4 C blueberries

 
  1. Divide fruit between fruit pop molds. Pour grape juice  into each mold. Place fruit pop sticks into the molds and freeze for 4 hours or until completely frozen.
  2. To serve fruit pops, run the base of each mold under hot water for 10 seconds. Pull gently on the fruit pop stick to release it from the mold.

Blueberry Cheesecake Bars :



  National Blueberry Cheesecake Day !!! 









  •        2 C graham cracker (crushed)
  •    !/33 C butter (melted )
  • 2 Pkg Cream cheese (soften)
  • 3/4 Sugar
  • 2 eggs
  • 1 tsp vanialla
  • 1 jar blueberry preserves
  • 1 C blueberries 
Directions :  Heat oven to 350 degrees
 Make crust by Mixing butter & graham cracker  and pressing into a 13x9 pan .refrigerate
Mix in a bowl - Cream Cheese,Sugar,eggs & vanilla  until  blended
Top crust with preserves -then blue & Cream cheese mixture. 

 Bake 30 minutes . let Cool & cut in bars.

Louisiana Strawberry Wine

Directions
For a single batch, place strawberries, sugar and citric acid in a 2 gallon crock. (The berry mix will bubble in the early stages of fermentation and may rise out of a one gallon crock.)
Crush fruit with a potato masher or pastry blender. Cover berry/sugar mix with 5 pints boiling water.

Strawberry Basil Homemade Frozen Yogurt



 The  4th week of May is Frozen Yogurt week. With Strawberries in season this is the perfect time to make some, No machine ? No worries !  Read on- 














                               
  • 1 lb. hulled strawberries
  • 1 lemon, zested and juiced
  • ½ cup sugar
  • ¼ cup packed fresh basil leaves
  • 1 and ½ cups whole Greek yogurt or 2 and ½ cups whole plain yogurt strained as described above
  • 1 Tbsp. corn syrup
  1. Put the strawberries, lemon zest, 2 tablespoons of lemon juice, sugar and basil leaves in a food processor. Pulse 5-10 times until well chopped up. Add the yogurt and pulse a few more times. Add the corn syrup and puree until smooth (I like some flecks of strawberries and basil though so not completely smooth).
  2. Transfer mixture to a large freezer bag. Remove all air from bag before sealing. Lay bag flat in the freezer. After an hour, take it out and smoosh it around. Lay it flat in the freezer. Repeat every hour. As the yogurt freezes, you will want to break up all chunks when you take it out. To do so, lay the bag flat in the counter. Use your fingers to push out any lumps such that the mixture is smooth again. When it is smooth but well-frozen, it’s ready to serve immediately. Or put it back into the freezer and leave it there. 25 minutes before serving, remove from freezer. Let it sit for 15 minutes then use your fingers to smooth it out again. You may want to put it back in the freezer for 5-10 minutes at this point to let it get a bit firmer again.

Lucky Penny day ! Copper Pennies Recipe

   

  Since Today is Lucky Penny Day ! I thought I would share my Mom;s recipe for











                                                   Copper Pennies
                  

  •  2 lb carrots (cleaned /sliced round )
  • 1 small bell pepper (sliced)
  •  1 small onion sliced 
  • 1 can tomato soup
  • 3/4 C vinegar
  • 1 T Worcestershire sauce
  • 1/4 C salad oil
  • 1 C sugar
  • 1 T prepared mustard
  • 1 T celery seed
  • salt & pepper to taste
  In salted water cook carrots until tender- about 5 minutes before done add bell pepper & onions. 
  Drain & Mix all the other ingredients together and pour over carrots. This can be served hot or cold =as a side dish or salad.

Moday : Graduation Day

      

     Graduation Ceremony : 

 My son graduated from High School on Monday. 

 Next step is on the college . 

   

        Graduation class is about 60 kids from around the state. My son went to an online school & they have one central graduation. Caps & gowns are purple but the lighting washes the color out.



    Getting his diploma - was a honor student & a National honors society member. Will be going to college on  full scholarship in Environmental Science.   Lisa

Ham & Cheddar Quiche







                       

  • 1 tablespoon butter
  • 1/2 medium yellow onion, chopped
  • 4 eggs, lightly beaten
  • 1 cup half-and-half
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups diced ham
  • 1 cup shredded swiss cheese
  • 1 cup shredded cheddar cheese
  • 1 deep dish frozen pie crust
Instructions
  1. Preheat oven to 375 degrees.
  2. Melt butter in a small nonstick pan and cook onion until soft. Let cool slightly.
  3. In a large bowl, whisk together eggs, half-and-half, salt and pepper.
  4. Stir in ham and both cheeses. (I like to leave a small handful of cheese to sprinkle on top.)
  5. Stir in cooked onion.
  6. Pour filling into pie crust, set on a baking sheet and place in oven for 40 to 45 minutes, or until set.
  7. Serve warm or chilled.

Devil Food Cupcakes



         Chocolate   Devil Food Cupcakes 

 






  •                1  Devil Food Cake Mix 
  •    box (4-serving size) chocolate fudge pudding and pie filling mix (not instant)
  • 1 1/2 C Milk
  • 2 1/2 C Bittersweet Chocolate Chips
  • 1 C Whipping Cream 
     
  • Heat oven to 350°F. Make and bake cake mix as directed on box for cupcakes, using water, oil and eggs. Cool completely.
  • 2
    Meanwhile, make pudding mix as directed on box, using 1 1/2 cups milk. While pudding is hot, stir in 1/2 cup of the chocolate chips until melted. Cover; refrigerate until cool, about 1 hour.
  • 3
    Place remaining 2 cups chocolate chips in heatproof bowl. In 1-quart saucepan, heat whipping cream to boiling. Pour over chocolate chips; let stand 1 minute. Stir with whisk until melted and smooth. Let ganache stand at room temperature 30 minutes, stirring occasionally, until thickened.

    Crumble 1 cupcake; set aside for topping. With end of wooden spoon handle, make deep, 3/4-inch-wide indentation in center of top of remaining 23 cupcakes, not quite to bottom. Spoon pudding into resealable food-storage plastic bag; seal bag. Cut 1/2-inch tip off corner of bag. Insert tip of bag into opening in each cupcake; squeeze bag to fill opening. Frost cupcakes with ganache; sprinkle with cupcake crumbs. Store loosely covered.

Spinach ,Eggg & Cheese Souffle






       

Spinach & Cheese Egg Souffle

  • 1 tube Pillsbury butter flake crescent rolls
  • 6 large eggs (keep one aside for brushing the tops of the crescent rolls)
  • 2 tablespoons milk
  • 2 tablespoons heavy cream
  • 1/4 cup shredded sharp cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 1 tablespoon Parmesan cheese
  • 3 tablespoons finely chopped fresh spinach
  • 4 slices bacon cooked and crumbled
  • 1/4 teaspoon salt
  • 1/4 cup shredded Asiago cheese

    1. Preheat the oven to 375 degrees.
    2. In a small microwaveable bowl, combine 5 eggs, milk, heavy cream, cheddar cheese, monterey jack cheese, parmesan cheese, spinach, bacon and salt. Mix well. Microwave this mixture for 30 seconds. Stir the mixture, then continue to microwave it in 20 second intervals about 4-5 times. You want the egg mixture to get just a tad thickened. It will still be very runny and uncooked, but the fact that it is just a tiny bit thicker will help hold up the crescent roll dough when you fold it over the top.
    3. Unroll the crescent roll dough and separate it into four rectangles. Press the perforated triangles together to make rectangles. Roll out each rectangle until it is in about a 6x6 square.
    4. Spray four ramekins or souffle dishes (about 4-5 inches in diameter) with cooking spray. Lay a rolled out crescent roll in each dish, with the edges hanging over the sides. Pour 1/3 cup egg mixture on top of each crescent roll dough. Sprinkle the Asiago cheese on top of the egg mixture, diving the cheese between the 4 ramekins. Fold the crescent roll dough overtop the egg mixture.
    5. Take the remaining egg and beat it lightly in a small dish. Using a pastry brush, brush the egg on top of the crescent roll dough.
    6. Bake at 375 for 20 minutes, or until browned on top.

Cherry Cobbler Day * Crockpot Cherry Dump Cake

 A recipe for the oven. 








  • 1 box Betty Crocker French Vanilla Cake Mix 
  • 2 cans Cherry Pie Filling {21 oz. each}
  • 1 stick Butter, melted
Instructions
  1. Spray inside of Crockpot with non-stick cooking spray
  2. Empty cans of Cherry Pie Filling into bottom of crockpot, and spread out evenly.
  3. In medium mixing bowl, combine dry Cake Mix and melted Butter, and stir until crumbly. {break up any large chunks into small crumbles with spoon}.
  4. Pour cake/butter crumble mixture over Cherry mixture in crockpot, spread out evenly, and cover crockpot with lid.
  5. Cook on HIGH for 2 hours, or LOW for 4 hours.
  6. Serve with Ice Cream or Whip Cream… ENJOY!!

Kool Aid Slushies

  • 2 cups of cold water
  • 1 kool-aid packet
  • 1/2 cup of sugar
  • 4 cups of ice

  1. Place all the ingredients in the blender in the order listed.
  2. Blend until smooth.
  3. Pour into four glasses and serve with a straw and maybe even a spoon.

Chocolate Chip Day


  Easy Chocolate Chip Cookies

cup packed brown sugar

cup butter or margarine, softened Save $

cups Gold Medal™ all-purpose flour

teaspoon baking soda

teaspoon salt

cup coarsely chopped nuts

package (12 ounces) semisweet chocolate chips (2 cups) 


  • 1
    Heat oven to 375ºF.
  • 2
    Mix sugars, butter, vanilla and egg in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Stir in nuts and chocolate chips.
  • 3
    Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
  • 4
    Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheet. Cool on wire rack. 
     
     
     Toll House Cookie Recipe :
     

Watermelon Salad with Feta




Ingredients

  • 2/3 cup balsamic vinegar
  • 1 T sugar
  • 1 small cubed  watermelon
  • 2 T lime juice
  • 2 T olive oil
  • 1/4 fresh mint leaves, chopped
  • 2/3 c crumbled feta cheese

Instructions

In a small saucepan set over medium-high heat, combine the balsamic vinegar and sugar. Bring the mixture to a boil and continue cooking , until it has reduced and is the consistency of syrup, about 5 minutes. (It will thicken as it cools and only yield a few tablespoons.) Set it aside to cool while you prepare the salad.
Cut the watermelon into cubes . Add it to a large bowl.
In a small bowl, whisk together the lime juice and olive oil with a pinch of salt and pepper. Pour the dressing over the watermelon, add the chopped mint and feta cheese, and toss to combine. Drizzle the salad with the balsamic syrup and serve immediately.

Home made Biscuits


      It's Home made Biscuit Day 

 

 

 

 

 

        2 C Flour

         3 t  baking powder

         1 t salt

         4  T shortening

          3/4 Milk (about) 

   Shift flour & baking powder. Cut in shortening(look like coarse meal). Stir in enough milk to make soft dough.  Place dough on floured board & knead about 1/2 minute. Roll out to 1/2 inch & cut out. Place on un- greased cookie sheet & Bake at 425  for 12-15 minutes. ( 24 small biscuits )

Paper Bag Apple Pie for Mother's Day

                  Paper Bag Apple Pie
  • 9 in pie shell ( unbaked)
  • 3 to 4 large apples cut into 8ths
  • 1/2 C sugar
  • 2 T flour
  • 2 T lemon juice
Topping
  • 1/2 stick margarine
  • 1/2 C flour
  • 1/2 C sugar
In a bowl place – apples & sprinkle on top : sugar,flour. Toss & place in pie crust. Drizzle with lemon juice. Make Topping : sugar & flour and then cut in margarine. Sprinkle over apples. Slide pie into a Heavy brown paper bag. Close with fastener. Place on Cookie sheet & Bake at 425 for 1 hour.
